In these curated consultations, by Emma herself, you will learn exactly how to bring a luxury experience to your guests through your wine and beverage list. These lessons are all about menu development for beverages ranging in topics from wines across the world, to home-crafted cocktails.
The mistake that so many restaurant owners and bartenders make is that they assume the dining experience lies predominantly in the food. We’ve all been told that “A way to a man’s heart is through his stomach.” However, through Emma’s experience as a luxury hospitality expert, she found that peak guest satisfaction, word-of-mouth exposure, and money lies in that beverage list.

As a restaurant or bar, it is your job to guide your guest’s dining experience and you have the power to decide how their night is going to go. If you’re going to provide a run-of-the-mill two drinks and an entrée type of experience, then that’s what you’ll get from a majority of the people who walk through the door.

A group of 4 women walks through your doors, planning on a simple dinner to catch up with one another. Upon entering they see a “champagne menu” with options of getting a bottle to share and combining it with specialty champagne-based cocktails. The menu looks so inviting and the cocktails sound so delicious that they decide to all split a bottle, as well as, order a round of cocktails.
In that single moment, all 4 of those women decided that this is not just another basic dinner. This just turned into a night-out experience and they are going to make the most of it. Which will likely mean ordering more drinks, higher-line dishes, and dessert at the end.
People go out so that they position themselves in elevated atmospheres. They dress up, they look forward to it, and in some ways, it borders on being a fantasy. If you can provide that affluent feeling that your guests are looking for, they will invest their time and money in that experience. You just have to give them a reason to.

In the day and age of social media, it has never been more important to utilize word-of-mouth exposure. By simply providing a unique beverage experience you can reach thousands of your ideal guests without spending a dime on marketing.

You can have the classics and a mediocre wine list and probably get by, but that’s not going to have people raving about your restaurant to all of their friends. Personally, I’m not going to post a simple Gin and Tonic on my Instagram story, but I would post (and tag) a craft cocktail with a beautiful presentation -- letting everyone know where I dined that evening.
If I am your ideal guest, who wants to spend money at your establishment, then I likely have friends and family who would be your ideal guests as well. By human nature, people are going to stick with what they know, but if someone they trust recommends something to them, they are 10x more likely to divert from the status quo and act on that recommendation.
In other words, you want to be on the ‘Gram and a beautifully curated beverage list is how you get there.
